Clement Pellerin , chef of Paris 1930 at The Landis Taipei , was born in Normandy, France . Pellerin had been working in many Michelin-starred restaurants in Paris, Ireland , Spain. Due to the passion for Chinese culture and martial arts , Pellerin went to Mainland China to learn Kung Fu . With the philosophy of Kung Fu, purity and simplicity , Pellerin started to interpret his cuisine based on its essence . Traveling from country to country , Pellerin enjoyed his journey which enriched his culinary inspiration . Working in Taiwan as a foreign chef , he has created over 200 unique dishes with the local ingredients , including cocoa , coffee , hibiscus , Litchi , Litsea , Rouge shrimp , etc . The idea of Pellerin energizes Paris 1930 and has been transformed into a new trend of modern French cuisine .
